Abstract | This curriculum guide contains materials for use in conducting a bilingual community school program in nutrition education for Hispanic youth and adults. Topics covered in the lessons include food choice, nutrients, nutrition, food groups, meal planning, and shopping. Provided first are separate matrices for six lessons geared to young adolescents and for six lessons geared toward adults. Each matrix contains concepts, competencies, and terminal performance objectives as well as a list of resources. Presented next are the 12 lessons of the course, each of which includes lists of competencies, terminal performance objectives, instructor performance objectives, learning strategies, and instructional resources. Included in appendices to the lessons are some or all of the following bilingual instructional materials: worksheets, recipes, discussion questions, charts, information sheets, and instruction sheets.
